Endive

Annual or biennial edible herb to 1m (3 feet) with deeply lobed leaves, many in a basal rosette. Blue flowers.

Uses

Harvest by cutting at ground level. Used in salads and as a garnish. Vegetable.

Culture

Suited to dry sunny climates and hydroponic culture. Prefers fertile, well-drained soil in raised beds with a soil pH of 5.5 Do not irrigate on to the leaves. Leaves can be blanched by tying them together.
